Tofu, Bok Choy and Mandarin Oranges

This is a nice light tofu dish. Serve it with rice or lo mien. It really is perfect for any time of year.

What you'll need:
1 head bok choy, chopped
1 package extra firm tofu - diced
vegetable oil
2 cloves of garlic, minced
3 tablespoons rice vinegar
2 tablespoons soy sauce
1 teaspoon cornstarch
1 large can mandarin oranges - drained

In a large skillet heat oil. Add the diced tofu (you can add it as is or toss it with cornstarch as in the Sesame Tofu recipe). Fry until lightly browned.
Remove the tofu and drain on paper towels.
Add the bok choy to the skillet and stir fry until it is wilted.
Add the garlic.
Mix together the soy sauce, rice and cornstarch and pour over the bok choy.
Add the tofu and bring to a boil.
The sauce will thicken as it boils so make sure to stir well.
Remove the skillet from the heat and add the oranges and stir well.
